In the next daily build, you can enable ViewDock hotkeys by using the “Hotkeys active” check item in the ViewDock context menu.  The item is “sticky” — it will stay set (or unset) across uses of ChimeraX.  With hotkeys enabled, if you are clicked into the ViewDock dialog or the 3D graphics window, then typing g/m/b/u will assign good/maybe/bad/(unrated) to the currently chosen compounds.  Up and down arrow will go up and down the compound table (unless you are focused in the 3D graphics and there’s a selection, in which case up/down arrow does the normal widening/narrowing of the selection).  Finally, the Escape key will turn off hot keys, in which case the only way to turn them back on is the ViewDock context menu.
