Hi Ana,
Sorry, ChimeraX does not have an EPS format option for saving sequences or sequence alignments.

Currently the formats for saving sequences are formats that are actually used for sequence data: clustal ALN, FASTA, and PIR (NBRF).  To instead save an image file of the sequence window you would need to use the screenshot capability of your computer.
