Hi Xiaohua,
You would not modify the named palettes which are built into the code (redblue, rainbow, alphafold, etc.).  Instead you would use the "palette" option to directly specify whatever colors you want.  How to specify colors or color/value pairs in with the "palette" option:

You can see the ones used in the alphafold palette and define something similar but with the differences that you want.
