Elaine is right that both ChimeraX and old Chimera have hollow ribbons and if you clip them you see inside. Your first image looks like a tube (ChimeraX command "shape tube #1@CA" which is not an actual ribbon but just a tube surface. Hollow surfaces are
capped.
