Ok, I just added the ability to adjust contour level mouse mode sensitivity, it will be in tonight's ChimeraX builds. For example,

mouse setting contour speed 2

will make contour level adjustment twice as sensitive. To save this setting use menu Favorites / Settings (or on Mac, ChimeraX / Preferences), the Startup tab, and put the above command under "Execute these commands at startup", and press the Save button.

Currently only contour level and rotate and translate mouse modes support the speed setting.
