
It is hard to answer such a general question -- for a more specific answer you would need to ask a more specific question,. The top image looks like sticks and ribbons, the bottom one looks like surfaces. You would need to have a file with atomic coordinates (e.g. a PDB file), open it, then adjust display styles of parts of the structure as needed.
